Cheers to twenty-seventeen!

As the new year approaches, I think back to the past year and how I had started so many things that I didn't finish or that I neglected and this blog is one of those neglected things.  I really have so much to talk about and share but I get so wrapped up in daily life that I just fail!  It really takes less than an hour to share a little something and I'd rather be in bed by 8 PM than open up my computer and do something for me.  

I think I say this every year but I want to start doing more for me!  I'm not saying that I don't do anything for me, I just want to take a little more time to do small things that make me happy.  I might have to stay up 30 minutes later than my family to do this but if that's what it takes then I will give it a shot!  

The new year is a blank page that I'm ready to fill with new adventures, old traditions, more travel, more cuddles, healthier everything & just more of what makes me happy!

What is the origin of your holiday tradition?

Hello Everyone!
As the holidays approach, I know we all have holiday traditions that we stick to, and I am an AVID listener to Elvis Duran and the morning show.  Literally Obsessed.  They were talking this morning about how soon is too soon to take a trip with someone that you are dating and it really resonated with me because me and Kyle went to Washington D.C on a whim 3 Thanksgivings ago and now it is a tradition that we plan to do forever and ever and take our kids to the same stops that we go to every year (literally cannot wait to hear "Mom we have heard how Abraham Lincoln died 12 times now)  CANT WAIT

Funnily enough.. we were in the "Talking phase" for like 3 months before we started dating.  I even called him my boyfriend to other people when I was talking about him before he "officially asked me" hehe.  2014 I decided I would go home for fall break rather than Thanksgiving because flights were cheaper, and I got more days off school, and it didn't interfere with track meets or finals.  Which meant I would have to find someone or something to do for Thanksgiving.  One day in October me and Kyle were hanging out at his house and he started telling me how much he loved Washington D.C. and wanted to go back there, he was surprised when I told him I had  never been and we talked about going together one day.  I then exclaimed, let's go for Thanksgiving!  I needed somewhere to go and I just kindof figured why not.  Kyle was taken by surprise when  I pulled up hotel information (probably freaked out because we barely started dating) but he went with it and we took 10 hour road trip to D.C and spent our first holiday together within the first month of being "official" all because I needed something for Thanksgiving :)
BUT it became our very favorite tradition, and we talk about how we will do this every year and bring our kids to the exact same sights we visit every year and one day we will tell them how the tradition even came about, which is even better than the actual tradition because of how funny it is lol

Faith in Humanity Restored!

A couple weeks ago my faith in humanity was restored.
Now, I typically have a very "half glass full" view of the world. Some might call it a naïve view but never the less, I expect everyone to be as happy go lucky and friendly as I am!
That being said, I have been in a couple fender benders in my 6 years of driving and my counterparts have not been the most forgiving or friendly to the young teenage driver.  A couple weeks ago, my University had its homecoming celebration.  Homecoming has always been my favorite Wittenberg holiday and this was my first time coming back as an alumni.  I had many responsibilities planning our track team tailgate and most of my friends were back in town what could possibly go wrong?!

Well, after I got done cleaning up the track team tailgate (which was a success btw I can't wait to plan one every year) I wanted to go home rest and freshen up a little before the evening festivities.  I was the first to park in a grass lot by the field (that no one is really supposed to park in) and I come back to the lot to find out that everyone followed my rebellious suit!  I was crammed from all angles into my spot in this illegal grass lot.  YAY!  I wasn't too concerned I have a pretty "Oh everything is okay" care free attitude most of the time, so you know I just back out of my spot like normal and what do ya know CRUUUUUUNCH.

I get out of my car and see that I hit not only someone's car, BUT a shiny nice black Cadillac (which funny enough I called my mom and said BMW). I knew it wasn't a huge deal because I only bent the license plate but I know people that drive nice cars don't always have the nonchalant attitude that Nissan sentra drivers have. I look around and ask the men tailgating in the illegal lot if they know whose car I just hit and no one knows but we are all curious to see what the blond bimbo does next.  I call my mom, and kyles dad wondering what on earth to do, if I leave a note, if leaving is considered a hit and run, how much Ohio license plates cost, just freaking out really.

So we all decide to leave a note with my number and just hope I don't get a really mean voicemail.
I go home and sit on my couch sad and defeated, staring at my phone waiting for an old man to call me and yell at me and threaten to sue me, the whole 9... and suddenly I get a text message from someone named Justin saying "Hey it's Justin with the black Cadillac.  I figure this license plate isn't worth much more than a beer at Mike and Rosies.  Lol, in all seriousness though no worries and thanks for the note and your honesty."

What. on. Earth.

I then call my friend, tell her I have to go to Pressbox and buy this man a beer because I hit his car, and hope I don't get kidnapped.

I metup with Justin who turned out to be a very understanding, nice, young man and we had a couple drinks on me as we laughed the whole situation off!

It was wonderful and Id like to think it is how I would act if roles were reversed.  Pay it forward everyone and don't be too quick to assume the worst in people, they might just surprise you! :)

T w e n t y y e a r s a p a r t

This is our blog twenty years apart.  We are a mother and daughter exactly twenty years apart and we are realizing 
that we are going through so many different life 
experiences, and have so many different perspectives, but 
we both are truly blessed, happy, and positive about our 
lives!  We have such a diverse range of topics as one of us 
is about to begin her life and is still figuring out who she is and who she want to be, is very career oriented, athletic, 
and at the very beginning of her life adventure....and the other is very family oriented, has had a successful career, raised two young adults, and is embarking on her second time around in the mommy world with two toddler boys.  
We hope you enjoy all the different perspectives, topics, and experiences we have to share and we will do our best to show you life 
twenty years apart.

Matthew's Homecoming Proposal "Rocked"!

This weekend Matthew asked his girlfriend to Homecoming & these days it's not just a question but a proposal!!  

He surprised her at Seven Magic Mountains which is an art exhibit in the middle of the desert.  He hid behind one of the rock structures with huge balloons and a sign that said "Homecoming would ROCK if you went with me".  It was adorable & his girlfriend was so surprised which made it that much more special!!

If you are in Vegas and have a chance to go see these rocks, do it!  It is a fun place to take pictures and just enjoy being in the desert especially now that the weather is perfect!

I am so excited to start planning the actual Homecoming date with Matthew, it's his first and last Homecoming so I want to make it special for him!  Thanks for reading and make sure you check back to for more about Homecoming 2016!

The three day diet!

So Matt & I tried the Military three day diet this past week.  I do not do diets, it is one of my life rules!  They just suck but I wanted to do something to get myself back on track.  I stopped working out and I started eating and drinking whatever whenever and I felt ugh!!  So anyway, Matt decided to do this with me.  It really wasn't that bad, we didn't starve or anything but it was hard not being able to just grab a snack or go to Starbucks whenever & I wanted to quit many times but Matt helped me with the mental issue and I survived!!  

This was suppose to be a fast way to lose up to 10 pounds in three days.  The menu includes meat, hot dogs, ice cream, bananas, coffee, tea, lots of water & tuna.  I felt full after eating the meals and I was so thankful for the ice cream dessert!  I only lost 4 pounds and Matt lost 7 pounds.  I worked out two of the three days and Matt did not!  I am happy for him but so frustrated that I gave up Starbucks for three days to lose only 4 pounds!!  

It was fun doing it  together and we might do it again just because we felt better eating less than we usually would and we loved the ice cream and banana dessert!  I slept better and honestly even though we had a small steak and two hot dogs in the  three days, I did feel better!  I noticed I had more energy and I wasn't bloated probably because I wasn't overeating and having Starbucks twice a day!!  

So I would recommend this diet if you have a big weekend coming up and you want to lose a few quick pounds, I don't know what I could have done different to lose more weight but the four pounds came off my waist which made me happy!!  You can find out more about this diet at http://themilitarydiet.com/military-diet-plan/

Grilled Artichokes!!!

Get ready to crave these grilled artichokes as your new favorite!!  My husband is the grill master so all credit goes to him for these yummy artichokes!!  


INGREDIENTS:
4 artichokes
Extra virgin olive oil
salt & pepper
garlic pepper


DIRECTIONS:

Wash the artichokes with water.

Cut them in half.

Bring one large pot of water to a boil & boil the artichokes 15 minutes.

Drain the water and place the artichokes on a baking sheet.  Sprinkle with extra virgin olive oil, salt & pepper and garlic salt (BE GENEROUS WITH ALL).

Let the artichokes sit for 10-15 min. before placing them on the grill.  Grill both sides 10 minutes each.

Let cool 5 min. and devourer these gorgeous artichokes!!  






The artichoke and corn on the cob were the stars of this delicious cookout!!  Oh and that martini wasn't too bad!!  ;)

Now I have to tell you that this picture was taken in the middle of the day, it was 110 degrees, windy and the dust was blowing in their eyes.  They could barely keep their eyes open anyway because the sun was so bright and then add the dust storm....poor kids!!  

I may not put this on our Christmas card but I am getting a large print and hanging it in the house because to me this photo is just perfect!  It makes me laugh and I will always remember the torture these kids went through to try and make the perfect Christmas card photo!!  Thank you my babies for everything you do for me!!!

DIRECTIONS TO MAKE A SIMPLE PATIO BENCH!


This summer my sister came for her annual visit and I talked her in to helping me make a bench for the patio!  We sweat & worked our butts off but it was worth it!  The bench turned out better than I pictured and we use it all the time! 

Here's how to make it....

SUPPLIES:
TWO- 2 X 3 X 8' CUT 4 PIECES- 17 1/4" (LEGS), 2 PIECES- 9"(BOTTOM ENDS), & 1 PIECE- 40 1/2"(BOTTOM CENTER)

THREE- 1 X 4 X 6' CUT 2 PIECES 46" & 4 PIECES 12" (SEAT BASE)

TWO- 1 X 8 X 6' CUT 2 PIECES 48" LONG (SEAT)

2" WOOD SCREWS

2" FINISHING NAILS

SIX SANDING BLOCKS 

WOOD GLUE

BLACK PAINT OR STAIN

POLYURETHANE- 2 COATS

DIRECTIONS:
I HAD ALL OF THE WOOD CUT AT HOME DEPOT WHICH MADE IT SO MUCH EASIER FOR MY SISTER AND I SINCE WE DO NOT LIKE USING THE SAW!

SAND ALL OF THE PIECES!!

GLUE AND NAIL TOGETHER THE SEAT BASE (TWO 46" PIECES AND TWO 12" PIECES)

NEXT ADD GLUE TO THE REMAINING 12" PIECES AND NAIL THEM TO THE BASE FOR SUPPORT SPACING THEM EVENLY.

GLUE AND NAIL DOWN THE 48" PIECES (SEAT)

TURN THE SEAT UPSIDE DOWN AND ADD THE FOUR LEGS & SCREW THEM IN

TURN THE BENCH BACK OVER AND SCREW THE TWO 9" BOTTOM ENDS BETWEEN THE LEGS...MEASURE TO MAKE THEM EVEN!

SCREW THE 40 1/2" PIECE TO THE BOTTOM ENDS AND PAINT OR STAIN AWAY!

MY SISTER MADE THE BEAUTIFUL CUSHION TO COMPLETE THIS PERFECT BENCH!







THIS WAS SO EASY TO MAKE THAT NEXT YEAR WE HOPE TO MAKE A FARMHOUSE TABLE!!  ;)

Summer Break is O V E R & I am emotionally drained WITH ALL THE BACK TO SCHOOL HAPPENING!

Hello!!!  First of all, I am so sorry if anyone has been peeking in & not getting anything new from us!  I have honestly just been lazy!  It got a little crazy for awhile having house guests and going on road trips but I was really just being lazy!  

So much has happened since my last blog!  My sister, mother & nephew came for a week long visit. We went to San Diego and oh my word do I have so much to tell you about that trip!!!  WE LOST MAXIMUS AT THE BEACH, THE VERY CROWDED BEACH!!!  It's a long story but the important thing is we found him safe and sound!!  Jordan came home for ten days, it happened so fast I want to cry thinking about what we didn't get to do!!  Madden started preschool and Maximus started kindergarten (5days a week 8:30-3)!!!  I am emotionally drained from all of this and today Matthew turned seventeen.  He starts his senior year in high school next week and I just want to sit down and cry.  He has grown up so fast I do not want to think about him going away to college and becoming a house guest...

On a happy note, Maximus has been taking his lunch to school and I have been having a lot of fun packing his lunch with love and all of his favorite foods.  If you have a fun way to pack lunches please share as I want everyday to be a surprise in his lunch box!

Madden learned the song "were going on a bear hunt" and he loves singing it over and over, it is so so cute!!  He cried and hid under the slide his first day but on his second day he wanted to leave early and could not wait to get to preschool.  I feel so fortunate that he has such wonderful teachers watching over him!

Matthew is taking an ACT class in hopes that he can raise his score ten points!!!  Please pray for him as he takes his second ACT test on Sept. 10th!!!

I don't talk about him much but my husband is getting hotter and hotter the older we get!  He bought himself a new shirt (picked it out all by himself) and when he wore it for the first time I just melted!  I love that he still makes my heart skip a beat <3

So that's it for today, I hope to get back to blogging at least a few times a week, it feels good and I really have so much I want to share!!

25 Thoughts that cross your mind when moving in with your boyfriend

Hello readers!
So I have been living with Kyle for two months now and I am absolutely loving it!  He left me for a weekend to go to his brothers bachelor party and It really didn't feel like home without him lol I feel like we have a really great relationship and it is only getting better!  I will admit I got a little nervous my first night there knowing I had nowhere else to go and I wondered if it was too soon, but I am so so happy and it feels dreamy that I get to come home to him every night and see him every morning... It is also convenient not to have to pack a sleepover bag every night ;) These are some thoughts that have crossed my mind that I'm sure has crossed or will cross your minds lol



  1. Where and when do I go #2?
  2. Does he aim for the floor around the hamper?
  3. How many showers in one day does he take?
  4. Does he think its weird when I don't shower half as much as him?
  5. Where the hell do I put all my makeup
  6. There was a day in my life, that I had my own closet. remember those days Jordan? Ahh..
  7. Why do I have so much more stuff than him and does he have any needs at all ever?

Veggie Bars!!

Hello Stangers!!  I know it's been awhile!  Thank goodness blogging is just a hobby and not my full time job!  ;)  I have been doing nothing productive at all!  My daily mom work of course but mostly laying by the pool or hanging out with my family!  I had a dinner party & a girls night in this past week and made some old and new recipes so I thought I'd share one of the new ones!!



VEGGIE BARS RECIPE


INGREDIENTS:


2 PACKAGES OF CRESCENT ROLLS

1 PACKAGE OF CREAM CHEESE
1 PACKAGE OF BUTTERMILK RANCH MIX
BROCCOLI
CARROTS
CAULIFLOWER
GREEN ONION
RED PEPPER
SHREDDED CHEESE

DIRECTIONS:


ROLL THE CRESCENT ROLLS ONTO A BAKING SHEET AND BAKE 8-10 MIN. @ 350 DEGREES.


MIX THE CREAM CHEESE, RANCH MIX & GREEN ONION TOGETHER.


CHOP THE VEGGIES INTO VERY SMALL PIECES


ONCE THE CRESCENT ROLLS ARE OUT OF THE OVEN AND COOLED, CUT INTO SQUARES USING A BREAD KNIFE.


SPREAD THE RANCH MIXTURE ONTO EACH SQUARE AND ADD VEGGIES AND SHREDDED CHEESE.  


REFRIGERATE UNTIL READY TO SERVE!!

Zucchini Zucchini lets see that bikini!!

About a week ago my dream came true and Kyle told me he wanted to start eating healthy!!!
Although I do enjoy my drive thru binge at Mcdonalds, and when bought, I can down an entire sleeve of oreos in one sitting, I actually do enjoy eating healthy! So when my fast food loving 5 meals a day Kyle told me he wanted to make a change my heart BURST!!
I tried making healthy meals for myself and staying organic two summers ago when I was first on my own but it is soo hard making healthy meals for one person.  Ingredients go bad really quickly like fruits and veggies and I always threw out so many leftovers it was doing more harm than good.  I am really excited that I have Kyle and his brother and mom to cook for so we can all enjoy some tasty healthy meals!!!
Here are some of the zucchini meals we have tried recently and all have been a success. They have a good amount of meat for Kyles needs, and a low amount of carbs for his moms needs, plenty of veggies for my satisfaction and SO MUCH flavor!!  It is soooo easy taking favorite recipes and substituting red meat for ground turkey or chicken, or replacing bread and noodles for zucchini and seriously they taste SO good! Let me know if you guys try any and thanks for reading :)



 Lasagna with Zucchini noodles and Spicy Turkey meat sauce



INGREDIENTS: 

  • 4 large zucchini, sliced about 1/4 inch thick
  • 1 teaspoon olive oil
  • 3 cloves garlic, minced
  • 1 small yellow onion, diced
  • 1 green pepper, diced
  • 1 pound extra lean ground turkey
  • 1 - 14 oz can tomato sauce
  • 1 - 14 oz can crushed tomatoes
  • 2 teaspoon dried oregano
  • handful of basil, finely chopped (about 1/4 cup)
  • handful of parsley, finely chopped (about 1/4 cup)
  • red pepper flakes, if desired
  • salt and pepper, to taste
  • 15 oz part skim ricotta
  • 1 egg white
  • 1/4 cup grated Parmesan cheese
  • 12 oz reduced fat or part skim shredded mozzarella cheese

INSTRUCTIONS:

  1. Preheat oven to 375 degrees F.
  2. Place sliced zucchini on large baking sheet coated with non stick cooking spray. Sprinkle with salt and roast in the oven for 15-20 minutes to help dry out the zucchini a bit. This is a critical step.
  3. While the zucchini noodles are roasting, you can make the turkey meat sauce. Heat olive oil in a large skillet over medium high heat. Add garlic, onions, and peppers and cook a few minutes until onions become translucent and garlic is fragrant; stir occasionally so that you don't burn it. Add in ground turkey and cook until no longer pink. Add in tomato sauce, crushed tomatoes, oregano, basil, parsley, and a few dashes of red pepper flakes. Bring to a boil, then reduce heat to low and simmer 25 to 30 minutes or until sauce REALLY thickens up! Season with salt and pepper to taste. Remove from heat to cool.
  4. In a medium bowl, combine egg white, ricotta, and Parmesan. Season with a bit of salt and pepper. Add in 1/2 cup of the slightly cooled meat sauce and stir to combine.


5. To assemble lasagna, spread 1/2 of the turkey meat sauce into the bottom of a 9x13 inch baking pan coated with nonstick cooking spray. Place zucchini slices evenly over meat sauce, spread on 1/2 of the ricotta mixture, then sprinkle 1/2 of the mozzarella on. Repeat layers again starting with the meat sauce, zucchini slices and ricotta mixture and finishing with mozzarella. Cover with foil and bake for 30 min. Remove foil and bake for 15 minute longer uncovered. Serve with a side salad. Makes 8 generous servings.

Kyle looooves Pizza, craves it all the time, and probably eats it at least 3X A WEEK!  I have tried telling him how bad it is for him but he can't give it up sooooo I found the solution... Zucchini pizza crust! and he is a happy camper!







Zucchini Pizza crust

Ingredients:

  • 4 cups zucchini, shredded
  • 1 egg
  • 1/2 cup shredded mozzarella 
  • 1/4 cup grated parmesan
  • 1 teaspoon oregano or Italian seasoning
  • salt and pepper to taste

Directions:

  1. Preheat oven to 450
  2. Microwave the shredded zucchini on high for 6 minutes, let cool, place it in a tea towel and squeeze as much moisture out as you can.
  3. Mix the zucchini, egg, mozzarella, parmesan, oregano, salt and pepper, press the mixture onto a parchment paper lined baking sheet and bake for 15-20 minutes until the crust is lightly browned
When we made the zucchini crust, we made a BBQ chicken pizza!  This is what we added but creativity is key to fit the needs of your family! I can't wait to try different flavors of pizza with this crust.. so good!


BBQ PIZZA

Ingredients: 1/2 cup chipotle BBQ sauce 1 cup chopped red onion 1/4 cup of chopped green pepper 3/4 cup skim mozzarella cheese  1/4 cup corn 2 cups shredded chicken
Directions: Spread BBQ Sauce and mozzarella cheese on crust Place toppings around pizza

Bake on 450 for 10-15 Minutes until cheese is bubbling! If you like avocado it is really yummy if you put some slices of avocado on the pizza too!  :)

FINDING OUR PERFECT PRIME RIB RECIPE ONE EXPLOSION AT A TIME!

EMBARRASSING BEASLEY MOMENT!!

On Father's Day Matt & I decided we would attempt to make his most favorite, Prime Rib!  We read many many recipes.  We went shopping and found the perfect size meat at Costco.  We even got a few extra tips from the butcher.  He recommended that we get a digital thermometer so we could read the temperature of our meat without opening the oven.  So, I went searching for that digital thermometer and I found one at The Home Depot for $10.  I bought it and we were all set to make Matt's perfect Father's Day meal!

We scheduled our Sunday around cooking times for dessert, prime rib & all of our sides.  This meal was going to be the best Father's day meal Matt has ever had at home!!  The creme brulee was easier than we thought & was a success.  We began prepping the prime rib and we decided that we were going to do the oven off method which meant DO NOT OPEN THE OVEN FOR TWO HOURS!!  We put the prime rib in the oven and we realized that we forgot to add the digital thermometer so we had to open the oven and take out the meat, add the thermometer and start over!  About five minutes passes and a loud boom happens in the oven....We ran to see what happened and again we had to open the oven.  THE DIGITAL THERMOMETER EXPLODED!  



It exploded & melted but our meat was ok!  Apparently this digital thermometer was not oven safe at 500 degrees!  Lesson learned!  We needed a thermometer though, it was very important to know the temperature of the prime rib since we wanted to cook it med-rare!  I had to quickly go to Smith's (in my fat girls by the way) & buy any meat thermometer they had.  When I got home the house was so smokey but smelled so good, the meat had been cooking at 500 degrees for about 20 minutes & it was looking wonderful!  We decided that since we'd already opened the oven twice we would not open the oven until 1 1/2 hours after the oven shuts off.  

When we check the meat temperature again we need to raise it 5 more degrees so we put it back in for the 30 more minutes and when we pull it out it is 3 degrees above where we wanted it to be but still med-rare!  

Long story short but our first ever home cooked prime rib was delicious.  A lot of lessons learned!!  Next time we do prime rib, I'm sure we will nail it!  Our team work  just works!!  I love that Matt got to enjoy his most favorite meal at home & even though we had some explosions we did it our way!!


Still working on perfecting the Beasley prime rib recipe but stay tuned, it will come!

CREME BRULEE

My husband's favorite dessert is creme brulee   I finally attempted to make it yesterday since it was Father's Day!  I cannot believe how easy it was and it was honestly so delicious!

INGREDIENTS:

4 CUPS HEAVY CREAM
2 TSP VANILLA EXTRACT
6 EGG YOLKS
1 CUP SUGAR, 1/2 CUP IN MIXTURE & 1/2 CUP FOR CRUST
BERRIES (I USED STRAWBERRIES, RASPBERRIES & BLUEBERRIES)
RAMEKINS

DIRECTIONS:

HEAT HEAVY CREAM AND VANILLA EXTRACT IN A SAUCE PAN UNTIL HOT, BUT NOT BOILING.

IN A MEDIUM BOWL, WHISK EGG YOLKS AND 1/2 CUP OF SUGAR UNTIL WELL MIXED, POUR IN THE HOT CREAM GRADUALLY, MIXING CONTINUALLY.

PLACE SIX (7-8 OZ) RAMEKINS INTO A LARGE BAKING PAN. POUR HOT WATER INTO THE PAN TO COME ROUGHLY HALFWAY UP THE SIDES OF THE RAMEKINS.

POUR THE EGG MIXTURE INTO THE RAMEKINS AND BAKE AT 325 DEGREES FOR 45-50 MINUTES.  THE CREME BRULEE SHOULD BE SET, BUT STILL A LITTLE JIGGLY IN THE MIDDLE.  REMOVE THE RAMEKINS FROM THE PAN, ALLOW TO COOL TO ROOM TEMPERATURE, COVER WITH PLASTIC WRAP AND REFRIGERATE FOR AT LEAST TWO HOURS AND UP TO THREE DAYS.

REMOVE THE CREME BRULEE FROM THE REFRIGERATOR.  SPREAD A TABLESPOON OF SUGAR ON TOP OF EACH CREME BRULEE.  USING THE TORCH, MELT THE SUGAR TO FORM A CRISPY TOP.  ALLOW THE CREME BRULEE TO SIT FOR AT LEAST TWO MINUTES BEFORE ADDING THE BERRIES AND SERVING!
